Edgecraft Corporation started in 1984 in Avondale, Pennsylvania, and introduced the Chef’s Choice brand the following year. The Avondale facility still produces a full line of knife sharpeners, waffle makers, electric knives and more. Edgecraft first marketed the Chef’s Choice Trizor line of kitchen knives in 1992, using high carbon content steel originally developed for aerospace applications. Trizor steel held an edge three times sharper than conventional stainless steel blades and kept that edge up to ten times as long as the usual high carbon stainless steel.
Chef’s Choice built the first Gourmet Electric Food Slicer in 1994, adding affordable home versions of the rotary knife later. In 1995, the Chef’s Choice Model 2000 Commercial Diamond Hone targeted the sharpening needs of restaurants and other industrial users. In 1996, Chef’s Choice added a line of budget-priced knives intended for commercial uses.
Chef’s Choice products include some notable industry firsts, like the first electric sharpener for Asian knives. Chef’s Choice also developed the first electric sharpener to properly hone either the 20 degree edge bevel of American and European blades, or the more acute 15 degree edge of Asian blades.
