If you’re looking for a basic set of sharp knives, and don’t want to have to mess with the piecework of selecting particular knives over others, this Calphalon set is a darn good choice.
Calphalon is a trusted name in cutlery, though not as high-profile as Wusthof or Shun. This set attempts to combine the sharpness of a Shun with the weight of a Wusthof.
It includes a 3.5-inch paring knife, 5-inch santoku, 5.5-inch serrated utility knife, 6-inch utility knife, 8-inch chef’s knife, kitchen shears, and diamond steel, all set to fit perfectly into a beautiful bamboo knife block.
Each blade is crafted from 33 layers of VG Japanese stainless steel and is made to look like a traditional Damascus steel blade. While not as hard as the Shun steel, and therefore potentially not as sharp, this is still a darn good steel for a kitchen knife.
Beware, though, it can rust. You should not leave it in water for any length of time. You’ll need to hand-clean these knives immediately after use. If you’re not willing to do that, you should look for a different set.
You can see the full-tang blade running all the way up the handle. This is what gives the knife its “handle-heavy” feel, which many Wusthof owners appreciate.
The handles feature black, ergonomic poly-resin amid its integrated bolster design.
These knives look quite good too, worthy of display on a knife strip in a gourmet kitchen.
