Throw a stick in a department store and you’re bound to hit at least two different knife sharpening devices. Between electric sharpeners, waterstones and pull-through systems, it’s hard to figure out which is the right choice.
The Henckels Twinsharp Duo is a manual pull-through system that costs just twenty bucks. It’s not one of our favorite devices, though, so read on for the pros and cons.
First, the good news. This device comes with slots at pre-set angles so you don’t have to worry about searching around for the correct angle for your knives. It also features two slots — one for aggressive resharpening and the other for fine-tuning a blade that just needs a touch up.
Now for the bad news — those pre-set angles are somewhat limiting. The angles on your knives are going to be whatever Henckels has decided is optimal. That might be okay for relatively wide-angled Henckels knives, but if you’ve got thinner Japanese knives, this is certainly not the product for you.
Unfortunately, there’s more bad news. Because this is a manual sharpening device, it’s up to you to find the right “touch” when using it. Too much pressure and you may find the sharpening is too aggressive. Too little pressure and your knives will not get sharp. That’s one of the reasons you’ll see a mixed bag of customer reviews on Amazon.com.
So what do we recommend as an alternative? The Chef’s Choice M120 is more expensive, but you’ll be much happier with it in the long run.
